As the temperature gradually cools, the sweetness of brown sugar quietly unfolds, the flavour evolving into a subtle fruitiness.

Origin
San Juanillo is a high-altitude growing region situated at the foot of the Monte Sillo mountain range.
The Typica variety has been around since the area's initial cultivation, and is still being cultivated today. The region entered the specialty coffee market in 2019. Around 20 farmers are working together to improve the quality of their crop in this region.
Process
Fully ripe cherries are carefully sorted and fermented whole for 24 hours.
After pulping, the beans are fermented in water tanks for 25-30 hours, then slowly dried over 20-25 days on African beds in vinyl-covered greenhouses. This process is designed to maintain clarity without allowing for excessive fermentation.
