A surprisingly direct expression of strawberry flavours.

While the character and sweetness that comes from fermentation do stand out, the profile remains clear, with a balance that is easy to drink.

The result is a blend where freshness meets rich flavours within the same cup.

Process: Strawberry Infused Honey

During fermentation, strawberries and wine yeast are added, and the coffee undergoes 72 hours of anaerobic fermentation.

The beans are then pulped and dried using the honey process

By combining controlled fermentation with infusion, this process creates that distinct and well-defined flavour profile.

About Infused Coffees

Infusion is a process where fruit or other ingredients are added, typically during the fermentation stage.

Unlike flavoured coffees where flavourings are added after the beans have been processed, infused coffees develop their flavours naturally as part of the processing itself.

Farm & Producer

This lot is part of the Cofinet project.

Producer Luz Helena Salazar grew up in a family with a long history of coffee production and is now dedicated to producing specialty coffee himself.

From the careful selection of fully ripe cherries to precise fermentation management, each step is handled with intention and care to ensure the utmost quality.
